The Mantel, Culinary Ascent is a private dining establishment set within Seven Summits Lodge in the Trilogy® at Tehaleh® community. Our menu features a collection of curated favorites crafted with local produce, beef from nearby pastures, day-boat catches from coastal fisheries, and wines from leading local producers. Our chef offers an ever-changing selection of new offerings, from healthy dishes to your most sinful cravings. The Mantel is committed to supporting local providers, and to serve only the freshest and tastiest ingredients.

For Dino, life as a Chef all started with his mother. She was a single working mom and Dino would prepare dinner for her and his two sisters on weeknights. His experience created a passion for food that he didn’t realize until he started as a dishwasher for the Lobster Shop on Ruston Way and realized that the kitchen was where he belonged. He graduated South Seattle Community College with a degree in Culinary Arts & Hospitality Management, with an emphasis on classical French training. After working at several restaurants, he became the Executive Sous Chef for Tacoma Country & Golf Club. Following, he became the Executive Chef for Canterwood Country & Golf Club, where he expanded his repertoire and prepared a wide variety of cuisine. Now at The Mantel, Chef Dino is excited to share his passion for great food with the Trilogy and Dining Members.
