Salted Brick restaurant is located in Ocala, Florida and brings to life regional favorites alongside American classics, using locally-sourced, fresh ingredients. Featuring a centerpiece exhibition kitchen and wood-fired oven, watch as items are grilled to perfection above a natural flame. Chef Cipollo is a talented and innovative culinarian who has honed his craft at some of the finest clubs and resorts in the United States and the Caribbean, for over two decades. His impressive resort resume includes senior positions with the Boca Raton Resort and Club, Longboat Key Club, and the Ritz Carlton in St. Thomas. His resume also includes premier country clubs including Idle Hour Country Club in Lexington, Kentucky (the state’s most prestigious exclusive membership club), TPC Sawgrass, and Augusta National, home of The Masters golf tournament. His most recent position as Corporate Executive Chef for Club Med Resorts encompassed Florida, the Caribbean, and Mexico.
His vast knowledge and experience from many regions in kitchen operations is matched only by his creative genius and artistic flair in food design and presentation. These culinary attributes were on display at events that have included four U.S. Presidents, and two Shane DE Rotisserie dinners.
Chef Cipollo is an equestrian enthusiast and currently resides in Dunnellon with his wife of 32 years, Linda.
