Chef Fred Quinones is our Executive Chef at The Foundry. Before coming to Trilogy Lake Norman, he was most recently the Culinary Director for Link & Pin and The Cellar at Duckworth’s. Chef Fred is originally from New York City, where he graduated with a degree in Culinary Arts & Restaurant Management from the Art Institute of New York. He’s travelled and cooked throughout Europe and beyond, to explore the unique flavors and culinary techniques indigenous to Spain, Great Britain, and Vietnam. While in New York, he served as the Corporate Executive Chef for the NFL, JP Morgan Chase, Citigroup, Ernest & Young, and Goldman Sachs, as well as some of the finest restaurants in New York, including Le cirque, Aureole, An American Place, Daniel, and Jean-Georges, among others. After six years in Tampa as the Executive Chef of the Fly Bar and Restaurant, he moved to North Carolina to The Peninsula Club. We are excited to have Chef Fred bring his talents and expertise to The Foundry.
