Chef Brett Faldstein is the Executive Chef at The Foundry. Born and raised in the Northwest suburbs of Chicago, he was brought up in a household that loved to cook. From his mother and grandmothers to his father and uncles, everyone in the family loved good food. So, from a very young age, food and its preparation were at the heart of who he was. After stints in two different professional fields, Brett returned to his roots and went to culinary school, all the while working as a line cook and sous chef in the suburbs. He then spent time at Bull & Bear and Howells & Hood in Chicago before relocating to Charlotte, North Carolina, where he spent time at Sea Level NC and consulted for Fern, a vegetarian/vegan restaurant, before landing here at The Foundry in Twin Mills Club.
